Flambé: Where Street Food Meets Fine Dining and the Magic of Fire in the Heart of Thessaloniki

A new foodie landmark on Pavlou Mela Street
Since July 2026, downtown Thessaloniki has had an exciting new spot that’s rewriting the rules of modern street food. Right in the heart of the city, at 17 Pavlou Mela Street, Flambé is a fresh, creative venture that seamlessly blends fine dining with a polished, stylish look and feel.
Behind Flambé is owner and chef Nikos Koukoudis. With a long and successful career in the food world, he also runs his own catering company in the Pieria region, N.K Catering. Founded by Nikos back in 1999, the company is ISO 22000 certified and offers top-quality food options. He’s also a partner in Karasimou Estate, which has an excellent restaurant on site and hosts weddings, christenings and other events.
When you step into Flambé, you’ll find a really comfortable space, both indoors and out. The restaurant was created to prove that fast food can also be high-quality, handmade and downright delicious. As owner Nikos Koukoudis told us, the idea behind Flambé is that street food can be presented beautifully, bringing together the speed of fast food with the philosophy of a proper restaurant.
With generous portions, excellent ingredients (like the choice meats from Pieria) and affordable prices, Flambé has already won over the crowds.

The signature flambé technique, where tradition meets creativity
What really sets the place apart is the very cooking technique that gave it its name. Flambé, the brief burst of flame when alcohol is ignited during cooking, is used with a chef’s precision to release aromas and give dishes rich, caramelized notes.
The kitchen’s philosophy is rooted in traditional Greek cooking, enriched with creative touches from international cuisine. The menu is entirely meat-based, ideally paired with a list of organic wines, the result of the owners’ collaboration with Artemis Karasimou. The space also hosts special events.

Signature dishes that have become the talk of the town
Since its first days, the menu has featured some irresistible options that have already won a devoted fan base. Standouts include the show-stopping flambé skillets in several versions (pork, beef, chicken, sausages and mushrooms), as well as tasty skillet options à la crème, stroganoff and sweet and sour.
Then there are the fluffy “grandma’s meatballs” (keftedakia), which bring back warm, nostalgic memories. The real hit, though, is the “Koumbaroula”, an original sandwich on handmade brioche, baked with eggs from the owners’ own production, and filled with chicken thigh fillet, bacon, smoked cheese and fresh mesclun.

Finally, during the festive seasons, the restaurant adapts its menu with a great selection of holiday-inspired dishes.
